These aren’t your traditional halloween cookies, but they’re pretty damn delicious!  I love the crunch of macadamia nuts, and I love finding excuses to pull out the pumpkin spice chocolate chips.  (Need another excuse?  pumpkin spice muffins.) Halloween mash cookies are a perfect blend of chocolate, white chocolate, pumpkin spice, and that crunch from the macadamia nuts.

This cookie recipe can also be a good way to use up a last few chocolate chips if you have those odds and ends, since you can always adjust the ratio and supplement with some more of the others if needed!  I do think the orange makes them look more Halloween-festive though. It’s a different take on monster mash–Halloween mash.

These chocolate chips tend to be seasonal, and are delicious if you’re into the whole pumpkin spice thing.  Now I’m actually usually not a huge fan of pumpkin spice, but I was happily surprised to find I loved the pumpkin spice flavor in a chocolate cookie!  The cookie dough might have been even better than the cookie…

I am surprisingly super excited about Halloween this year!  Usually I enjoy Halloween, but it’s nothing too special for me since I am definitely too old to go trick or treating.  But since we bought our house this year, I’m looking forward to seeing the trick-or-treaters we get!  We have a ton of perfectly aged kiddos in our neighborhood, plus with townhouses, that means a higher density of candy and door knocking!

If you’re curious where this recipe came from, check out Amy’s recipe dark chocolate halloween chip cookies!  I swapped chopped macadamia nuts for the regular chocolate chips because I was craving a macadamia nut cookie, and the result was deeeeelicious!  I just love the texture of a soft cookie and that satisfying snap of a macadamia nut!

Ingredients

  • cups all-purpose flour
  • cup dark cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup butter (2 sticks)
  • 1 cup granulated sugar
  • cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • ½ cup pumpkin spice baking chips (you could also swap in pumpkin spice truffles if you can find them. May want to replace both pumpkin spice & white chocolate chips.)
  • ½ cup white chocolate chips
  • ½ cup macadamia nuts, roughly chopped

Instructions

  • In a large bowl, cream butter and sugar together.
  • Add eggs and vanilla and mix until incorporated.
  • Add flour, cocoa powder, baking soda, and salt to mixture and mix until combined.
  • Fold in the ½ cup pumpkin spice baking chips, ½ cup white chocolate chips, and ½ cup macadamia nuts. Reserve some for topping (only required for aesthetics).
  • Scoop cookie dough into balls 1½" balls. If doing this by hand, you may refrigerate the dough 30-60 minutes to make it easier to handle.
  • Place cookie dough balls onto a parchment paper lined baking sheet. Bake 8-10 minutes, until just set. Do not overbake. The cookies will firm up as they rest and keep a lovely chew.
  • Upon removing from the oven press extra baking chips into the top as desired. Make sure to do this while still warm from the oven for them to stick. Allow to cool before serving.
